This is a basic recipe that can easily be adjusted. Leave out the nuts, add some orange or lemon zest, or go super crazy and toss in some chocolate chips or fresh blueberries. Remember the bananas should be overripe—no green at all, and the spottier the better. If you’re brand new to making banana bread (or bread in general), no worries. This type of bread is known as a ‘quick bread’ because it doesn’t need yeast, hours of rising and any dough-punching or kneading. Simply mix and bake!
Makes 12 sliced servings
Ingredients
- 1 ¼ cup sugar
- ½ cup canna butter, melted
- 2 eggs
- 1 ½ cups (3-4 medium) overripe bananas, smashed
- ½ cup milk
- 1 teaspoon vanilla extract
- 2 ½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon cinnamon (optional)
- 1 cup chopped walnuts or pecans (optional)
Directions
- After preheating the oven to 180 C (350 F), butter and flour the bottom of a standard-sized loaf pan.
- Using a stand or hand mixer, beat together the canna butter and sugar until creamy. Add the eggs, one at a time and mix on low until fully incorporated. Add the mashed bananas, milk and vanilla. Beat at medium-low until smooth.
- Sift together the dry ingredients, including the flour, baking soda, salt and cinnamon. Add a little at a time to the wet mixture as it’s beating on low speed. Once all of the dry ingredients are included, mix until fully blended. (Don’t over mix the batter, as it creates a dense, rubbery loaf and not the soft, delicate bread of your dreams.)
- Gently fold in the nuts, chocolate chips or other additions (if using).
- Bake your loaf for 55 to 75 minutes, depending on the size of your pan and your specific oven. You should be looking for a completely set bread (where a toothpick comes out of the centre clean) that’s golden brown on top.
- Cool on a wire rack for 10 minutes before removing from pan. Then allow to cool completely before slicing… if you can stand it.

As a general rule, try and maintain easily understood ratios between amounts of cannabis and butter or oil being infused. If your infused oil or butter is particularly strong, consider using only half infused and half non-infused, or whatever ratio works best for your specific needs. It’s incredibly important to keep your edibles out of reach of children or anyone else in your household who should not be using them. Make sure your edibles are properly marked and stashed safely away.
