  1. Preheat the oven to 350°F. Coat several large baking sheets with cooking spray.
  2. Combine the peanut butter, brown sugar, baking soda, and salt in a bowl. Add the egg and vanilla extract and beat until smooth.
  3. Shape the dough into 24 balls and arrange on the sheets. Dip the tines of a fork into flour and gently press a crisscross pattern into the top of each cookie.
  4. Bake for 10 to 12 minutes, or until lightly browned on the bottom. Transfer to a rack to cool. Store in an airtight container at room temperature.
