jumbo foil muffin-cup liners (2- to 2 1/4-inch-diameter base)

package pound cake mix

3/4
tsp.

almond extract

medium black or purple plums

tbsp.

sugar

1/4
tsp.

ground cinnamon

  1. Preheat oven to 350 degrees F. Arrange foil liners in 15 1/2″ by 10 1/2″ jelly-roll pan. (You do not need a muffin pan.)
  2. Prepare pound cake mix as label directs, adding almond extract with liquid ingredients.
  3. Meanwhile, slice plums in half on either side of pit; discard pits. In cup, combine sugar and cinnamon.
  4. Place about 1/3 cup batter in each foil liner; top with plum half, skin side down. Sprinkle with cinnamon sugar. Bake cakes 30 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack, about 30 minutes.
