Granola is great, but good granola is hella expensive, so this recipe brings together odds and ends that you might have in the cupboard (if you’re a nuts and seeds person) and creates a good granola on the cheap (sort of).

Little note on the ingredients, I’ve used hemp oil instead of sunflower (the standard granola oil) cause its good for you and stuff, and I can’t taste a difference, so I recommend you do that. I picked up some local honey at the Foodies Festival this weekend courtesy of Blackman Bee Farm, local honey is an insanely good hayfever antidote and its likely to be 6708% better quality than branded stuff, so if you can get your hands on some near you its worth buying! And finally, almond butter, my favourite new swap-out ingredient, palm-oil free and delicious in its own right, this has replaced peanut butter permanently.

Makes a couple of kilner jars

2 tbsps honey
2 tbsps hemp oil
1 tbsp maple syrup
1 tbsp smooth almond butter
3 tbsps toasted hemp seeds

3 tbsps toasted sunflower seeds
1 tsp cinnamon
2 tbsps chopped pistachio nuts
4 chopped brazil nuts
25g chopped almonds
150g rolled oats

  1. Pre-heat oven to Gas Mark 2 (conversions here)
  2. Mix together the honey, oil, syrup and almond butter in a large bowl
  3. Add all dry ingredients and mix until everything really comes together
  4. Spread on to two baking trays lined with parchment
  5. Bake for 35 minutes, toss the mixture after around 20 minutes

You’ll know its done when your trays are covered with sweet smelling golden brown goodness that strongly resembles granola, make sure you let it cool off before you put it in a fancy kilner jar and show it off.
