No Bake Peanut Butter Cherry Trail Mix Bites are the perfect pre-run or on-the-go snack! Full of flavor, fiber and a hint of sweetness, they are kid friendly, gluten free and vegan.  

Hi friends, hope you had a great weekend! I’m excited to re-share one of my favorite snack recipes with you today with these No Bake Peanut Butter Cherry Trail Mix Bites.

So, one of my blog goals/resolutions is to update some of my older recipe photos. Let’s be honest – people pick food based on photos. You want it to speak to you. Some of my older photos don’t do the recipes justice. So, slowly and surely, hopefully I can re-shoot some of these recipes.

These energy bites continue to be one of my favorite snack recipes. I made a bunch this weekend. Part of me thinks I should keep making things in bulk to freeze for when baby gets here, but the other part of me knows that snacks like this don’t last for long around our house. Even Tater would eat these if she could – I’m not certain about chia and hemp seeds for dogs, but I’ll err on the safe side and stay away. She goes to town on peanut butter, though. And eggs. Those are her two favorite people foods.

Perfect On the Go and Pre/Post Workout Snacks

Anyway, here I am digressing. These are perfect for quick, on-the-go snack ideas. Or, a fun accompaniment to your salad, oatmeal or yogurt. They also pose as ideal pre and post workout snacks. They check ALL of the boxes.

Best of all, these energy bites are no bake and culminate many of my favorite ingredients. We’ve got hemp seeds, chia seeds, flax seeds, oats and peanut butter in these guys.

To get started, you will need a food processor for this recipe because it does all the work for you. I recommend this one.  Especially since it broke and Kitchen Aid sent me a replacement. Pretty awesome customer service.

To make, you’ll just mix all of the ingredients together, pulse for a few minutes and you’re done! Look at all that goodness!

In my opinion, all lunchboxes should have one of these for every day of the week. Additionally, these would be great to have on hand when you invite the gals over for book club or for the Bachelorette. Bring out the vino and serve these for snacks.

With only natural ingredients, these energy bites are free from all the processed stuff and hard-to-pronounce chemicals. The variety of seeds give you necessary healthy fats, including both omega-3 and omega-6’s, and are a great source of plant-based protein.

And let’s talk about the dried cherries – they are fantastic. I always have some dried fruit on hand for long runs (instant glucose), and I had this almost-gone bag of dried cherries to use (I love this brand – no added sugar or oil, cherries only). I figured they would be perfect to add a tart, yet sweet taste to these bites, and they were! It’s like a peanut butter cherry jelly mini cookie. You could also substitute these or these as well.

Finally, just make sure to allow these guys to sit in the fridge to firm them up a bit, but they can be ready in under an hour! If the mix seems too dry, you can add more honey or maple syrup if needed.

  • ¼
    cup
    maple syrup (or honey if not vegan)
  • ¼
    cup
    ground flax
  • 3
    tbsp
    natural peanut butter
  • ¼
    cup
    hemp seeds
  • ¼
    cup
    chia seeds
  • 1
    tsp
    vanilla
  • ¼
    cup
    dried cherries
  1. Stir all ingredients, except the dried cherries, in a medium bowl or pulse in a food processor on low.

  2. Transfer mixture to a small to medium bowl, adding cherries.

  3. Cover and let the mixture sit in the refrigerator for 30-45 minutes to make the mixture easier to hold and handle.

  4. Form into 1” balls. Store in an airtight container and keep refrigerated for up to a week.

*you may need to add extra honey or maple syrup if the mix seems too dry.
