Hey, hunnies. How are you doing? I am feelin myself lately, tbh. A couple days ago I had a kinda blue mental health day but since then I have woken up in the best mood and simply EXCITED about bein alive! This is big for me because my regular mindset is to overanalyze everything and worry about if I said something problematic or if everyone realized overnight that I’m an asshole or have a panic attack over the reality that I and everybody I know will eventually die and no one cares, etc. You know, right?

amazing albums, I’m watching hilarious youtube series about bad ass ladies figuring out life, I’m sleeping in, reading, getting new ink, appreciating being in AND out of my comfort zone and taking it all day by day. This existence is so strange and complicated and wonderful and terrifying, it’s a bitch to navigate. But we’re all doin it. We all ARE DOING IT. And for that, please give yourself a big hug or mini-celebration today. You deserve everything. Moving on to food: my fave topic… *creepy smile*.

These protein bars are delish (although admittedly not the prettiest). Eat them whenever, eat as many as you like. You know the drill.

CHOCOLATE CHIP + HEMP PROTEIN BARS

Chocolate chips:
1/4 cup melted cacao butter
1/4 cup cacao powder
1/6 cup maple syrup
1/2 teaspoon vanilla extract

Bars:
1 cup pecans
1 cup rolled oats
1 cup raisins
1 tablespoon melted cacao butter
1 tablespoon maple syrup
2 scoops hemp protein powder
Pinch salt

To make the chocolate chips: stir all the ingredients together until smooth. Spread evenly onto a plate lined with tinfoil or plastic wrap and put in the freezer. It will get hard in 10-15 minutes. Chop it up into chocolate chips and put back in the freezer.

To make the bars: grind the oats and pecans into flour in a blender or food processor. In a food processor, add all the ingredients together and process until you have a moist, rumbly dough that holds its shape when pressed between two fingers. Roughly mix your chocolate chips into the dough then press it all into a lined baking pan and put in the fridge or freezer until solid (2-3 hours or overnight). Chop into bars and keep in the fridge or freezer for whenever you need a nutritious protein snack!

Note: I drizzled mine in extra chocolate and some sesame seeds. Of course.
