Peppermint Patty Brownies

Is there any secret or “trick” to this recipe? It makes sense to use an eight inch square pan (rather than a larger size pan) so that the brownies are thicker to accommodate the mint patties. However, I tried using my favorite, Baker’s Edge multi-corner brownie pan, and the recipe did not work out very well. The peppermint patties essentially burst within the hot batter, sending mint up to the top of brownie and towards the sides. Admittedly, I probably added a bit too much water to the dough (of the Betty Crocker mix) and perhaps the temperature (350 degrees) did not need to be quite so high. So I’m wondering if it helps to freeze the peppermint patties before adding to the pan? I hope to try again using a glass (Pyrex) eight inch square pan, but if anyone has some suggestions or details not included in the basic recipe above, please let me know.

These were soo good! Just make sure they are completely cooked. If not, they are very gooey which isn’t really a bad thing! 🙂

I agree with vegtbull– sometimes there are comments to read, sometimes no one has had anything to say one way or another.
When I’ve read comments, I seem to encounter a pretty general mix of pluses, minuses, and (my favorite)suggestions for what different cooks add or subtract. I hope this one turns out: I love chocolate and mint!
